Kristina's Apple Pudding Cake


Kristina’s Apple Pudding Cake


1 cup fresh-ground whole wheat or spelt flour
½ cup plain yogurt
¾ cup raw honey
½ cup butter
1 egg
3 medium apples shredded (peeled if not organic)
1 tsp cinnamon
½ tsp nutmeg
¼ tsp sea salt
1 tsp baking soda

Pre-heat oven to 350°F. In a mixing bowl cream honey, butter and egg. Add yogurt, apples, cinnamon, nutmeg, salt and baking soda. Blend in flour. Pour into a greased, square baking dish. Bake for 45 minutes. Serve hot with Vanilla Ice Cream, (page ) or at room temperature with Sweetened Whip Cream (page ).


I have decided to start adding recipes to my blog. The page( ) thing, is for my book so just ignore that. As soon as I figure out how to list the recipes on the side of my blog I will do that. Hope you all enjoy these. This particular dessert is very rich, so a small piece goes a long way. We like it warm with cream or ice cream with it.

Mmmm! Sounds good! Too bad I don't have any fresh ground flour, can you just use regular whole wheat flour?

Stef,
yes you can use regular whole wheat, but I wouldn't try it with white flour. It has a really gooey, cake, pudding texture and probably wouldn't cook right with white flour. You should try it, its really good.
