Kristina's Apple Pudding Cake





This is a recipe from my book. A good friend of mine (Kristina) gave it to me. I tweaked it to meet my needs and here is the finished product. It is a VERY RICH dessert, and tastes even better with vanilla ice cream or whipped cream.

Kristina’s Apple Pudding Cake

1 cup fresh-ground whole wheat or spelt flour
½ cup plain yogurt
¾ cup raw honey
½ cup butter
1 egg
3 medium apples shredded (peeled if not organic)
1 tsp cinnamon
½ tsp nutmeg
¼ tsp sea salt
1 tsp baking soda

Pre-heat oven to 350°F. In a mixing bowl cream honey, butter and egg. Add yogurt, apples, cinnamon, nutmeg, salt and baking soda. Blend in flour. Pour into a greased, square baking dish. Bake for 45 minutes. Serve hot with Vanilla Ice Cream, (page ) or at room temperature with Sweetened Whip Cream (page ).

Bosch Class Friday March 27th at Noon

I just found out the date I will be doing my next Bosch class.
Friday March 27th at Noon.

We will be making 2 different recipes:
1-Soft Whole Wheat Sugar Cookies---you know those BIG round sugar cookies with the pink frosting? Well this recipe is a MUCH healthier version and tastes delicious! Of course we will have some type of healthy frosting to decorate with. This recipe would make a great Easter activity to do with the family.

2-Homemade Marshmallows made with honey---who knew you could make homemade marshmallows! They are yummy and easy to make!
We will be doing some kind of Easter theme with the marshmallows as well. Maybe marshmallow eggs with chocolate on top?

Mark your calendars this is going to be one of my "sweetest" classes!

P.S. The Whole Wheat Sugar Cookies recipe is in my book--but the Homemade Marshmallow recipe is not, so if you want that recipe you will have to come to the class!

Sprouted Wheat

This is sprouted wheat. I don't know if you can see it or not, but there is a tiny little white sprout on the end of the wheat. This is what it should look like, after sprouting. Although you can let it sprout longer if you wish. I have found that if I let it go too long--they tend to get sour.
I soaked this wheat (1 1/2 cups of wheat in a quart jar) for about 2 days, give or take a little. I rinsed them 3 times each day, and then filled them again with water.


Once they sprouted I drained them, placed them in a towel to dry them as much as possible. And spread them out on a baking sheet. (I lined the baking sheet with wax paper)
I then baked them in a 250°F oven for about 2 hours. Check them every 30 minutes, or until they are dry.

I will allow them to fully cool on the tray overnight. Then I will grind them and hopefully, make some pie.
This wheat makes great cookies!

**Soaking grains before we eat them allows the body to get more nutrition from them. It breaks down the outer layer of the grain (phytic-acid) which inihibits the utilization of certain nutrients like, calcium, magnesium, iron, copper etc.
Most whole grains contain phytic-acid in their outer layer.
Buckwheat, millet and brown rice have low levels of phytic-acid, therefore little or no soaking is required.
Quinoa, wheat, and barley are some grains with high amounts of phytic-acid, so soaking is always preferred.

What I Had for Dinner/ Bean and Cheese Quesadillas and Salsa


Okay...there is really nothing to this. Some corn tortillas, black beans, cheese, sour cream, avocado, lettuce. (Quesadilla) Then....some health food store corn chips (they are the best!) And last but not least homemade fresh salsa!!

**I need to give special thanks to Tanner (my camera man and my photo editor!) He is doing a great job--and I am so grateful for his help. I never would have gotten all of these photo's out last week if it weren't for him.

Fresh Salsa

8-10 small-medium tomatoes, chopped
¼ cup sweet onion, chopped fine
½-1 cup chopped cilantro
Juice from ½ lemon
1-2 jalapeno’s, finely chopped
Sea salt to taste
Chop the tomatoes, onion and cilantro and mix together in a bowl. Stir in the lemon. Add the sea salt to taste then add the jalapeno to desired heat. Serve with Homemade Corn Chips (page ) or sliced vegetables. This is best at room temperature

Breakfast/ Whole Grain Waffles and Homemade Strawberry Syrup



We had this for breakfast on saturday. Homemade whole grain waffles with homemade strawberry syryp and sweetened plain yogurt. Oh ya--don't forget the egg. SO GOOD!
I have been trying to re-create the good ol' Eggo Waffle--of course the healthy way. I like the texture of eggo waffles-maybe not the taste so much. I think this recipe is closer than I have gotten before. When they come out of the waffle iron they are very soft-but they crisp up as they cool--which I like!
Soft Wheat Flour Waffles

4 eggs
¼ cup raw honey
1/3 cup grape seed oil
1 tsp vanilla
2 cups raw milk
2 1/4 cups fresh-ground soft wheat flour
3 tbsp aluminum-free baking powder
½ tsp sea salt

Blend the wet ingredients together until well combined. Stir in the dry ingredients until smooth. Allow the batter to rest for 5 minutes. Bake in a waffle iron according to manufacturers directions. Top with maple syrup or Apple Syrup (page ).

For the Strawberry syrup:
Frozen strawberries
Raw honey
Cornstarch and water
Heat the strawberries and mash with a potato masher. Stir in the cornstarch and water and cook for 2 minutes. Remove from the heat and sweeten to taste with raw honey.
Sweetened Yogurt
Plain yogurt
Raw honey
Mix together to your liking.

What I Had for Dinner/ Lentil Soup



This is seriously one of my FAVORITE soups in the whole world! It is simple, healthy and EASY to make. It can also have TONS of variations. This recipe is in the book.

Lentil Soup

2 tbsp olive oil
½ cup chopped onion
3 medium carrots chopped
5 cups beef broth or water
1 ½ cups dried lentils, rinsed or even better, soaked overnight in water
Sea salt and pepper to taste
Juice from 1 lemon
½ cup steamed, brown rice or quinoa (optional)
Fresh-chopped cilantro (optional)
Fresh-chopped tomato (optional)

Heat oil in large sauce pan, sauté onions and carrots for 5 minutes. Add broth and lentils and bring to a boil, reduce heat, cover and simmer for 30 minutes, or until lentils are cooked through. Add brown rice or quinoa, lemon juice, seasoning it with salt and pepper. Serve with fresh chopped cilantro and tomato on top.

*This is my favorite soup to eat when I have a bad stomach day. It just seems to soothe my insides.

Spice Cake with Vanilla Custard











"Birds Custard Powder"----is a pretty new discovery for me. I got it at Harmons, so I am assuming they have it in other stores as well.

I wouldn't call this a "healthy food" necessarily but it is not bad either. The only ingredients are:

Cornflour (cornstarch), salt, vanilla, color (annatto)

You then add your own milk and sweetener. I used raw milk and raw honey-however you do have to cook the stuff. You could use coconut milk, maybe almond milk (not sure about that one) real maple syrup or agave. I have made this several times with different variations.

Vanilla and nutmeg
Pistachios and almond extract (you know, the good old fashioned pistachio pudding you get that's green? well this tastes even better than that stuff and doesn't have sugar or artificial coloring!!)

Cocoa powder and cinnamon could be added also.

This is MUCH easier than making homemade pudding from scratch-plus it takes very few ingredients!! Also--no eggs! You can serve it warm or chilled.
I put vanilla and nutmeg in it this time to go with the Spice Cake.
The Spice Cake is actually one of my FAVORITES!! It is so moist and yummy! This recipe is in my book--so if you like it, get the book and you will have even more healthy, delicious recipes to use!!
Spice Cake

½ cup butter
1 ¼ cups raw honey
½ cup sour cream
3 eggs
1 cup raw milk
2 ½ cups fresh-ground whole wheat flour
1 tsp aluminum-free baking powder
1 tsp baking soda
1 tsp sea salt
1 tsp cinnamon
½ tsp allspice
¼ tsp ground cloves
¾ tsp nutmeg

Cream butter and honey until well blended. Mix in sour cream. Add eggs one at a time beating in between each addition. Stir in milk. Mix in 1 cup flour with all other dry ingredients. Add remaining flour and mix just until blended. Pour into a greased 9x13 inch pan.
Bake in a pre-heated 350°F oven for 35-40 minutes or until wooden pick inserted in the middle comes out clean. Top with naturally sweetened apple sauce and Sweetened Whipped Cream (page ).

What I Had for Dinner-Homemade Pizza







Homemade pizza's on homemade whole wheat bread, and sauteed green beans.

This is a great dish when you don't have a lot of time, AND everyone gets to put what they want on their own pizza. Kids really like helping with this one.
I like artichoke hearts, olives, onions, red bell pepper, jalapeno's and cheese. I don't use pizza sauce on mine, I prefer just a little smear of good quality mayonnaise. You could also use butter or olive oil if you don't want to use mayo.
For traditional pizza sauce I just use tomato paste. Add a little garlic, italian seasonings, water and sea salt.
Top it all off with fresh grated parmesan cheese, and you are in pizza heaven!!

What I Had for Dinner-Beef & Roasted White and Sweet Potatoes




Beef Rib Steaks, broccolli, roasted thyme and rosemary potatoes, and roasted sweet potoatoes.


Oh.....and if you came to my class you will know why sweet potatoes are good for you:)

What I Had For Dinner-Italian Pasta and Sausage


I am creating a new topic list. I am going to post as often as possible (with pictures) what I had for dinner. Hope you like it.

This is the first entry. I call it Italian Pasta and Sausage, you can call it YUMMY!

The parmesan cheese looks weird in this picture, once it hit the hot pasta it got white spots on it. It's not mold!!


The sausage I use is from Harmons, they make their own sausage without any MSG or preservatives, and this one (Garlic Chicken) is made out of chicken not pork. I am not a pork fan.


The sky's the limit as far as what you want to put into this dish. I always put garlic, fresh or canned tomatoes, and fresh basil. Then the rest depends on what's in the fridge. Fresh spinach, artichoke hearts, green beans, zucchinni, red bell pepper, fresh mozzarella, etc etc. Served over whole grain pasta. I prefer whole wheat semolina, I don't really like whole wheat pasta. They taste VERY different to me. But then again I think I have turned into a food snob. Sorry!


We also had a green salad with a VERY simple balsamic dressing.

Balsamic Vinegar (good quality)

Extra-virgin olive oil

A little raw honey

Fresh-ground black pepper

Sea salt

Thanks to all my customers

I just want to thank all of you who came to my class on Feb 4th. It is fun to see the same people coming back again. I really hope you are all getting what you need from the classes. Do not be afraid to email me with questions or requests. I will help where I can.

My Soul Purpose Mission Statement


I went to a 3 day workshop/seminar a couple of weeks ago and I now have a mission statement, for myself and my business. Which essentially is the same thing I guess.

I think it important that all people create a mission statement for their own lives, businesses do it, and companies do it, so why shouldn't we? It will really add focus and direction in your life and make what you are doing so much more meaningful. It has always been really important to me to live my life with purpose. I have now clarified what my purpose is-- at this time in my life anyway.

The cool thing about "the way" that we learned to find our purpose in life at this workshop is we can always go back and "morph" it into wherever we are in life. AMAZING!!

Here is my "soul-purpose mission statement."

"As I walk with Christ, as a luminary, I stand in humility and confidence in helping others to awaken the vitality their souls already possess."

I would like to explain this a little.
"As I walk with Christ"--is pretty self explanatory. I want to live my life as Christ would have me, and I know that I need His help along the way. The visual I have of this (in my head) is walking hand in hand with our Savior.
"--as a luminary"-- I found the word luminary under 'leader' in the dictionary. I look at myself as more of a 'teacher' or 'guide.' AND I want the 'light of Christ' in me as I do this.
"--I stand in humility and confidence"--I need to stay humble, willing to learn as well as teach, and I could always use a little more confidence. Not only in myself but in the Lord and what He can do.
"--helping others to awaken the vitality their souls already possess."-- I want to help others to wake up, both physically and spiritually. I believe that all people have the ability to heal either body and/or spirit in some way. Somewhere inside of each one of us we already possess good physical and spiritual health, vitality! exuberance! My job is to somehow help you find it!

Asian Salad and Dressing


This is one of the things we had for dinner. It turned out really good and has very simple ingredients. We had Ham Fried Rice with it, only it didn't have ham or rice. Just kidding, it did have rice, but no ham. I had a little bit of natural bacon that I put in just for the flavor. We don't eat pork much. A strange thing happened to me after I became healthy, I started craving green vegetables. Seriously if I don't have green vegetables with my dinner I feel totally ripped off! I was not like that before.
*This is not in my book.
Asian Salad and Dressing

1/3 cup rice wine vinegar
2 tbsp Tamari sauce
¼ tsp fresh ginger, minced
1 small clove garlic, minced
1 tbsp raw honey
1 tsp sesame oil
1 tbsp toasted sesame seeds
Sea salt to taste

Mix the vinegar, Tamari sauce and the honey together until the honey dissolves. Stir in the remaining ingredients. Pour over 4 cups fresh baby spinach, mix and serve.

Update and Cooking Class

Okay, so I think the radio thing went pretty well. I know I had at least 7 listeners thanks to friends and family. Thanks guys!

I will be doing a cooking demo at the Sandy Bosch Kitchen Center on Feb 4th at noon. We will be making Cheese Empanadas and Chilean Tomato Salad. The cheese empanadas make a great appetizer or snack or they can just bring you to that HAPPY PLACE. And even if you don't like tomatoes, you will like the tomato salad, it is REALLY, REALLY good. I do have to give credit to my husband for this one because he is the one who PERFECTED it. I don't like plain tomatoes, but I do love them in this salad, especially with the cheese empanadas. YUMMY!
